BUT…if you should find yourself with some Chicken Pop-Ins™ or Chicken Fingers and you want to try something fun and zesty – this recipe fits the bill.
Mary’s Chicken Tacos in Ranch-Jalapeño Sauce
1 cup refrigerated Ranch dressing (light or regular)
1 large jalapeño pepper, stemmed
1 bunch fresh cilantro (about 1 1/2 cups loosely packed)
2 garlic cloves, chopped
1 tablespoon fresh lime juice
12 Mary Brown’s Chicken Fingers or 24 Chicken Pop-Ins
12 (6-inch) corn tortillas, warmed
Several radishes, sliced
1. Combine Ranch dressing, jalapeño pepper, cilantro, garlic and lime juice in a blender or food processor for 2 to 3 seconds or until smooth, stopping to scrape down sides as required.
2. Place 1 Mary Brown’s Chicken Finger or 2-3 Chicken Pop-Ins in each warmed corn tortilla.
3. Serve with dressing mixture and sliced radishes.
